This presentation and tasting was led by Jean-Louis Carbonnier.  Jean-Louis oversees the NY-based Comté Cheese Association which represents the Comté Protected Designation of Origin (PDO) in the U.S.

Carbonnier has worked with Comté  and has travelled extensively to the Jura mountains to visit Comté milk farmers, cheesemakers and affineurs over the years.
